#horlicious - We’re ringing in the weekend with this delicious stew from @schnabula_rasa 🤤 What are your meal plans? ◾️INGREDIENTS 2 tbsp olive oil 600 g potatoes 2-3 red peppers 1 leek 3 garlic cloves 2 tbsp paprika powder 1 tsp cumin 1/2 tsp cayenne pepper 1.4 litres vegetable stock 2 bay leaves (optional) 100 g fresh spinach or kale 100 ml vegetable cream Salt and pepper 2 tbsp apple cider vinegar some vegan sour cream and chives as a topping ◾️ PREPARATION Dice the potatoes, deseed and dice the pepper, cut the leek into fine rings and press the garlic. Fry the leek and garlic in olive oil in a large pan until translucent. Add the potatoes, peppers and all the spices to the pan and sauté for a few minutes. Then deglaze with vegetable stock and bring everything to the boil. Add the bay leaves and simmer over a medium heat for approx. 25 minutes. Remove a ladleful of the potatoes and some of the vegetable stock, puree finely and add back to the soup. Add the spinach or kale to the soup and simmer again for approx. 5 minutes. Finally, stir in the cream, flavour with apple cider vinegar, salt and pepper and serve with sour cream and chives. You can find the recipe in German in the comments.👇🏼
